- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup bell peppers, sliced
- 1/2 cup onions, sliced
- 1/4 cup chopped parsley
- 1 tbsp olive oil
- Lime wedges for serving
Instructions
- Preheat oven to 400°F (200°C). Toss bell peppers and onions with olive oil, salt, and black pepper. Spread on a baking sheet and roast for 15 minutes, until tender.
