  • 1 cup vegetable oil (for frying)

  • 4 sandwich buns (brioche or potato buns recommended)

Instructions

1. Prepare the Tartar Sauce:

  • In a small bowl, mix mayonnaise, tartar sauce, pickle relish, Dijon mustard, and lemon juice.
  • Cover and refrigerate until ready to use.

2. Make the Crispy Batter:

  • In a large bowl, whisk together flour, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  • Gradually add club soda, whisking until a smooth batter forms.

3. Heat the Oil:

  • Heat vegetable oil in a deep skillet over medium-high heat (about 350°F/175°C).

4. Coat & Fry the Cod:

  • Pat the cod fillets dry with paper towels.
  • Dip each fillet into the batter, letting the excess drip off.
  • Fry in batches for 3–4 minutes per side, until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.

5. Assemble the Sandwiches:

  • Toast the sandwich buns for extra flavor.
  • Spread tartar sauce on both sides of the bun.
  • Add lettuce, tomato slices, red onion, pickles, and cheese.
  • Place the crispy cod fillet on top and close the sandwich.
