Instructions
1. Prepare the Tartar Sauce:
- In a small bowl, mix mayonnaise, tartar sauce, pickle relish, Dijon mustard, and lemon juice.
- Cover and refrigerate until ready to use.
2. Make the Crispy Batter:
- In a large bowl, whisk together flour, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
- Gradually add club soda, whisking until a smooth batter forms.
3. Heat the Oil:
- Heat vegetable oil in a deep skillet over medium-high heat (about 350°F/175°C).
4. Coat & Fry the Cod:
- Pat the cod fillets dry with paper towels.
- Dip each fillet into the batter, letting the excess drip off.
- Fry in batches for 3–4 minutes per side, until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
5. Assemble the Sandwiches:
- Toast the sandwich buns for extra flavor.
- Spread tartar sauce on both sides of the bun.
- Add lettuce, tomato slices, red onion, pickles, and cheese.
- Place the crispy cod fillet on top and close the sandwich.
6. Serve & Enjoy:
