  • 1 head cabbage, core removed and shredded

Instructions

  1. Cook the Bacon:
    • In a large skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to remove the bacon and set it aside on a paper towel-lined plate. Leave about 2-3 tablespoons of bacon grease in the skillet.
  2. Sauté the Onion and Garlic:
    • Add the diced onion to the skillet and sauté in the bacon grease for 2-3 minutes, or until softened. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
  3. Cook the Cabbage:
    • Add the shredded cabbage to the skillet and toss to coat in the bacon grease. Cook for 7-10 minutes, stirring occasionally, until the cabbage softens and starts to caramelize.
  4. Season and Flavor:
    • Stir in the stone-ground mustard, smoked paprika, salt, and pepper. Mix well to evenly distribute the flavors.
  5. Add the Bacon:
    • Return the crispy bacon to the skillet and toss it with the cabbage. Cook for another 1-2 minutes to heat everything through.
  6. Serve:
