  • 1 lime (sliced)

  • Wasabi paste
  • Soy sauce (for dipping)

Instructions

  • Prepare the Fish:

    • Ensure all fish is fresh, high-quality, and sushi-grade.
    • Using a sharp knife, slice the fish into uniform pieces, about ¼-inch thick.
  • Arrange the Platter:

    • Place shiso leaves on a large, chilled plate.
    • Arrange slices of tuna, salmon, yellowtail, scallops, and white fish in an elegant, fanned-out presentation.
    • Place the uni in the center and garnish with microgreens.
    • Add lime slices and pickled ginger on the side.
