Instructions
- Activate the Yeast:
- In a large mixing bowl, combine the warm milk, 2 tablespoons of sugar (from the measured 1/2 cup), and yeast. Let it sit for 5 minutes until foamy.
- Mix the Dough:
- Add the egg yolks, melted butter, vanilla extract, remaining sugar, and salt to the yeast mixture. Stir until combined. Gradually mix in the flour, 1/2 cup at a time, until a soft dough forms.
- Knead the Dough:
- Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
- First Rise:
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Shape the Donuts:
- Punch down the dough and roll it out to about 1/2-inch thickness. Use a round cookie cutter (about 3 inches in diameter) to cut out circles. Re-roll scraps as needed.
- Second Rise:
- Place the dough circles on a parchment-lined baking sheet, cover with a towel, and let rise for 30 minutes.
