Flaky Egg, and Cheese Brunch Cups

Ingredients

  • 1 sheet puff pastry, thawed
  • 6 eggs
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup shredded cheese (cheddar or gruyère)
  • 2 tbsp chopped chives
  • 1 tbsp butter, melted
  • Salt & black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. Roll out puff pastry and cut into 6 equal squares. Press each square into the muffin tin.
  3. Sprinkle bacon and shredded cheese into each pastry cup.
  4. Carefully crack one egg into the center of each cup.
  5. Brush pastry edges with melted butter and season with salt & black pepper.
  6. Bake for 15-18 minutes, until pastry is golden brown and egg whites are set.
  7. Garnish with fresh chives and serve warm. Enjoy!

Notes

  • For a runnier yolk, bake for 14-15 minutes instead.
  • Swap bacon for cooked sausage, ham, or sautéed veggies for variety.
  • Use store-bought crescent dough as an alternative to puff pastry.
