Description

This Fireball Grilled Pineapple is the perfect blend of juicy, smoky, sweet, and spicy. Thick slices of ripe pineapple are marinated in Fireball Cinnamon Whisky, brown sugar, and vanilla, then grilled to caramelized perfection. Serve it as a bold summer dessert, a tropical BBQ side, or a boozy cocktail garnish!


Ingredients

  • 1 whole ripe pineapple, peeled and cored
  • 1/2 cup Fireball Cinnamon Whisky
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Slice pineapple into thick rings or long spears.
  2. In a bowl, whisk together Fireball Cinnamon Whisky, brown sugar, cinnamon, melted butter, and vanilla extract.
  3. Coat pineapple slices in the Fireball mixture and marinate for at least 30 minutes.
  4. Preheat grill to medium-high heat and lightly oil the grates.
  5. Grill pineapple for 3–4 minutes per side, until caramelized with grill marks.
  6. Remove from grill and drizzle with any remaining marinade.
  7. Serve warm on its own, with vanilla ice cream, or as a bold cocktail garnish.

Notes

  • You can prep the pineapple ahead and marinate up to 2 hours in advance.
  • If Fireball isn’t available, substitute with another cinnamon or spiced whisky.
  • Excellent served with a scoop of ice cream or paired with grilled meats for a sweet contrast.
