  • 2 fresh burrata balls
  • 4 cups mixed greens (arugula, spinach, or baby kale)
  • 1/2 cup blackberries
  • 1/2 cup cherry tomatoes, halved
  • 1 zucchini, spiralized or thinly sliced
  • 4 slices prosciutto, rolled
  • 2 tbsp pumpkin seeds
  • Edible flowers for garnish
  • 2 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Salt & black pepper to taste

Instructions

  1. Arrange the mixed greens on a large serving plate.
  2. Place burrata balls in the center and gently cut open for a creamy effect.
  3. Scatter blackberries, cherry tomatoes, and zucchini spirals around the plate.
  4. Add rolled prosciutto and sprinkle with pumpkin seeds.
  5. Drizzle with extra virgin olive oil and balsamic glaze.
  6. Garnish with edible flowers, season with salt & black pepper, and serve fresh!

Notes

  • Swap prosciutto for toasted walnuts or almonds for a vegetarian version.
  • Add a drizzle of honey for a sweet contrast.
