- 2 fresh burrata balls
- 4 cups mixed greens (arugula, spinach, or baby kale)
- 1/2 cup blackberries
- 1/2 cup cherry tomatoes, halved
- 1 zucchini, spiralized or thinly sliced
- 4 slices prosciutto, rolled
- 2 tbsp pumpkin seeds
- Edible flowers for garnish
- 2 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- Salt & black pepper to taste
Instructions
- Arrange the mixed greens on a large serving plate.
- Place burrata balls in the center and gently cut open for a creamy effect.
- Scatter blackberries, cherry tomatoes, and zucchini spirals around the plate.
- Add rolled prosciutto and sprinkle with pumpkin seeds.
- Drizzle with extra virgin olive oil and balsamic glaze.
- Garnish with edible flowers, season with salt & black pepper, and serve fresh!
Notes
- Swap prosciutto for toasted walnuts or almonds for a vegetarian version.
- Add a drizzle of honey for a sweet contrast.
