Description

This Lemon Thyme Mocktail is a refreshing, citrusy, and slightly sweet non-alcoholic drink, perfect for any occasion! Made with fresh lemon, coconut water, maple syrup, and soda water, it’s a light and hydrating mocktail with a touch of herbal thyme flavor.


Ingredients

Scale
  • 1 lemon
  • 1 teaspoon pure maple syrup (adjust to taste)
  • 60 mL (1/4 cup) coconut water
  • Soda water, to top
  • 1 sprig fresh thyme

For Garnish:

  • Lemon juice
  • Zest of 1 lemon

Instructions

Step 1: Prepare the Glass Garnish

  1. Zest 1 lemon into a shallow dish.
  2. Slice the lemon in half and squeeze some juice into a small bowl.
  3. Brush the lemon juice onto the side of a glass tumbler, then roll in the lemon zest to coat. Set aside.

Step 2: Make the Lemon-Thyme Mix

  1. Slice the remaining half lemon into wedges.
  2. In a cocktail shaker, add the lemon wedges and thyme sprig.
  3. Use a muddling stick to muddle and release flavors.
  4. Add the coconut water and maple syrup. Cover and shake well to combine.

Step 3: Assemble the Mocktail

  1. Fill the garnished glass halfway with ice. Add a lemon slice and thyme sprig.
  2. Strain the lemon-thyme mixture into the glass through a fine mesh strainer.
  3. Top with soda water and serve immediately.


Notes

  • For a sweeter mocktail: Add an extra teaspoon of maple syrup.
  • Want a stronger thyme flavor? Muddle more thyme or let the mixture sit for a few minutes before straining.
  • For a sparkling twist: Use flavored soda water like lemon or coconut.
