Meat:

  • 14 oz ground pork

Produce:

  • 1 1/8 oz carrots, finely chopped
  • 1/3 oz coriander root, minced
  • 1/3 oz garlic, minced
  • 2/3 oz green onions, chopped
  • 1/3 oz dried shiitake mushrooms, rehydrated & finely chopped
  • 1 tbsp crispy fried garlic, for garnish

Refrigerated:

  • 1 egg, beaten

Condiments:

  • 3 tbsp Golden Mountain sauce (or soy sauce)
  • 2 1/2 tbsp oyster sauce

Baking & Spices:

  • 1 tbsp cornstarch (helps bind the filling)
  • 1/4 oz black peppercorns, crushed
  • 1 1/2 tbsp white sugar

Oils & Vinegars:

  • 1 1/2 tbsp sesame oil (adds fragrance & moisture)
  • 1 tbsp garlic oil (for brushing after steaming)

Bread & Baked Goods:

  • 1 package dumpling wrappers

Instructions

1. Prepare the Filling:

  1. In a large bowl, mix ground pork, carrots, coriander root, garlic, green onions, shiitake mushrooms, egg, Golden Mountain sauce, oyster sauce, cornstarch, crushed black pepper, white sugar, and sesame oil.
  2. Stir until well combined and let sit for 10-15 minutes for flavors to meld.

2. Fill the Dumplings:

  1. Place 1 teaspoon of filling in the center of a dumpling wrapper.
  2. Lightly wet the edges with water, then fold and pinch the edges to seal. (You can pleat or leave them open-top like traditional Thai dumplings.)
  3. Repeat until all dumplings are assembled.

3. Steam the Dumplings:

  1. Line a bamboo or metal steamer with parchment paper or lightly greased cabbage leaves.
  2. Arrange dumplings ½ inch apart to prevent sticking.
  3. Steam over boiling water for 10-12 minutes, or until the pork is fully cooked.

4. Garnish & Serve:

  1. Brush with garlic oil and sprinkle with crispy fried garlic.
  2. Serve with soy sauce, sweet chili sauce, or a Thai-style dipping sauce.

Notes

  • Make it spicy by adding ½ tsp chili flakes to the filling.
  • Freeze uncooked dumplings on a tray, then transfer to a bag for later use. Steam from frozen for 15 minutes.
  • Pair with Thai iced tea or jasmine rice for a complete meal!
