Description

  • 6 pieces bacon, cut into 1-inch pieces
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons stone ground mustard (or Dijon mustard)
  • 1/4 teaspoon smoked paprika
  • 1 head cabbage, sliced and chopped
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  • Cook the Bacon:
    • Heat a large pan over medium heat and cook the bacon until crispy.
    • Remove the bacon with a slotted spoon and place it on a paper towel-lined plate.
    • Drain off some of the bacon grease, leaving about 2 tablespoons in the pan.
  • Sauté the Onions:
    • Add the diced onion to the pan and sauté for 2-3 minutes, or until translucent.
  • Add Garlic and Spices:
    • Stir in the minced garlic, stone ground mustard, smoked paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  • Cook the Cabbage:
    • Add the sliced cabbage to the pan.
    • Use tongs or a large spoon to stir and sauté the cabbage for 12-15 minutes, or until it is buttery soft and slightly caramelized.
  • Combine and Serve:
    • Toss the crispy bacon back into the pan and stir everything together.
    • Serve immediately as a flavorful side dish.
