For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
- 1 tbsp water
For the Vanilla Custard:
- 1 cup (240ml) milk
- 2 egg yolks
- 1/4 cup (50g) granulated sugar
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 tbsp unsalted butter
For the Toppings:
- 1 cup fresh berries (strawberries, raspberries, blueberries, or blackberries)
- 1 tbsp apricot jam (optional, for glaze)
- 1 tbsp powdered sugar (for dusting)
Instructions
1. Prepare the Vanilla Custard:
- In a saucepan, heat milk over medium heat until warm but not boiling.
- In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
- Slowly pour the warm milk into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over low heat, stirring until thickened (about 3 minutes).
- Remove from heat, stir in vanilla extract and butter, then let cool completely.
2. Prepare the Puff Pastry:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry and cut into 4-6 equal squares.
- Fold and crimp the edges slightly to create a border.
- Brush the edges with egg wash (whisk together 1 egg and 1 tbsp water).
3. Assemble the Pastries:
- Spoon cooled custard into the center of each puff pastry square.
- Arrange fresh berries on top of the custard.
4. Bake the Pastries:
- Bake for 18-22 minutes, or until the pastry is golden and puffed.
- If using, warm apricot jam and brush over the berries for a glossy finish.
5. Serve & Enjoy:
- Let pastries cool slightly, then dust with powdered sugar.
- Serve warm or at room temperature.

- No fresh berries? Use frozen berries (no need to thaw) or fruit preserves.
- For extra crispiness, chill the assembled pastries for 10 minutes before baking.
- Make it dairy-free: Use almond milk and dairy-free butter in the custard.
