Ingredients

Scale

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • 1 tbsp water

For the Vanilla Custard:

  • 1 cup (240ml) milk
  • 2 egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter

For the Toppings:

  • 1 cup fresh berries (strawberries, raspberries, blueberries, or blackberries)
  • 1 tbsp apricot jam (optional, for glaze)
  • 1 tbsp powdered sugar (for dusting)

Instructions

1. Prepare the Vanilla Custard:

  1. In a saucepan, heat milk over medium heat until warm but not boiling.
  2. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  3. Slowly pour the warm milk into the egg mixture, whisking constantly.
  4. Return the mixture to the saucepan and cook over low heat, stirring until thickened (about 3 minutes).
  5. Remove from heat, stir in vanilla extract and butter, then let cool completely.

2. Prepare the Puff Pastry:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry and cut into 4-6 equal squares.
  3. Fold and crimp the edges slightly to create a border.
  4. Brush the edges with egg wash (whisk together 1 egg and 1 tbsp water).

3. Assemble the Pastries:

  1. Spoon cooled custard into the center of each puff pastry square.
  2. Arrange fresh berries on top of the custard.

4. Bake the Pastries:

  1. Bake for 18-22 minutes, or until the pastry is golden and puffed.
  2. If using, warm apricot jam and brush over the berries for a glossy finish.

5. Serve & Enjoy:

  1. Let pastries cool slightly, then dust with powdered sugar.
  2. Serve warm or at room temperature.

Notes

  • No fresh berries? Use frozen berries (no need to thaw) or fruit preserves.
  • For extra crispiness, chill the assembled pastries for 10 minutes before baking.
  • Make it dairy-free: Use almond milk and dairy-free butter in the custard.
  • Storage: Best enjoyed fresh but can be refrigerated for up to 2 days.
