- 1/4 cup unsalted butter, melted
- 1/3 cup brown sugar
- 2 tbsp honey
- 1/4 cup Irish whiskey (such as Jameson)
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the slow cooker: Add sliced carrots to the crockpot.
- Make the glaze: In a small bowl, whisk together melted butter, brown sugar, honey, whiskey, cinnamon, salt, and black pepper.
- Coat the carrots: Pour the glaze over the carrots and toss to coat evenly.
- Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the carrots are tender.
- Serve: Stir before serving and garnish with fresh parsley. Enjoy!
Notes
- For extra caramelization, transfer cooked carrots to a baking dish and broil for 3-5 minutes before serving.
