Description

Tender, sweet, and buttery slow-cooked carrots coated in a rich glaze made with Irish whiskey, brown sugar, and honey. This easy and flavorful side dish is perfect for St. Patrick’s Day or any holiday meal!


Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/3 cup brown sugar
  • 2 tbsp honey
  • 1/4 cup Irish whiskey (such as Jameson)
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the slow cooker: Add sliced carrots to the crockpot.
  2. Make the glaze: In a small bowl, whisk together melted butter, brown sugar, honey, whiskey, cinnamon, salt, and black pepper.
  3. Coat the carrots: Pour the glaze over the carrots and toss to coat evenly.
  4. Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the carrots are tender.
