Description

For the Halloumi:

  • 1 block halloumi cheese, sliced into thick pieces
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup panko breadcrumbs
  • 2 tbsp sesame seeds (black and white mix)
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 2 tbsp olive oil (for frying)

For the Hot Honey:

  • 1/4 cup honey
  • 1 tsp chili flakes (adjust to spice preference)
  • 1 tsp apple cider vinegar

For the Slaw:

  • 1/2 cup shredded cabbage (green and purple)
  • 1/4 cup carrot, julienned
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp chopped cilantro
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Salt and pepper, to taste

For Assembly:

  • 2 brioche buns, toasted
  • 2 tbsp mayonnaise or spicy aioli

Instructions

  • Make the Hot Honey:

    • In a small saucepan, warm honey over low heat.
    • Stir in chili flakes and apple cider vinegar. Let it infuse while preparing the halloumi.
  • Bread the Halloumi:

    • Set up a breading station with three bowls:
      • Flour in one bowl.
      • Beaten egg in another.
      • A mix of panko, sesame seeds, smoked paprika, and salt in the last.
    • Coat each halloumi slice in flour, dip in egg, and press into the sesame-panko mixture.
  • Fry the Halloumi:

    • Heat olive oil in a pan over medium heat.
    • Fry halloumi slices for 2-3 minutes per side until golden and crispy.
    • Remove and drain on paper towels.
  • Prepare the Slaw:

    • Toss all slaw ingredients together in a bowl. Let it sit for a few minutes to enhance the flavors.
  • Assemble the Burger:

    • Spread mayonnaise or spicy aioli on the toasted brioche buns.
    • Add a generous layer of slaw, place the crispy halloumi on top, and drizzle with hot honey.
    • Close the burger and enjoy immediately!
