For the Baklava Rolls
- 2 sheets puff pastry, thawed
- 3/4 cup pistachios, finely chopped (salted & roasted)
- 1/4 cup sugar
- 1/4 tsp cinnamon
- 1/4 cup raspberry jam
- 1 large egg, for egg wash
- 1/3 cup unsalted butter, melted
For the Honey Syrup
- 6 tbsp honey
- 1 tbsp fresh lemon juice
- 1/4 cup water
Instructions
1. Preheat & Prepare the Pastry
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out puff pastry sheets on a lightly floured surface.
2. Make the Filling
- In a bowl, mix chopped pistachios, sugar, and cinnamon.
- Spread raspberry jam evenly over each puff pastry sheet.
- Sprinkle the nut mixture over the jam layer.
3. Roll & Bake
- Roll each pastry sheet tightly into a log and slice into 1-inch rolls.
- Place rolls on the prepared baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
4. Make the Honey Syrup
- While the rolls bake, heat honey, lemon juice, and water in a saucepan over medium heat for about 5 minutes, until slightly thickened.
5. Glaze & Serve
- Drizzle the warm honey syrup over the baked rolls.
- Let them soak for 5-10 minutes, then enjoy!
Notes
- For extra crunch, add chopped walnuts or almonds to the filling.
- Storage: Keep in an airtight container at room temperature for up to 3 days.
- Best served warm, but can be reheated for extra crispiness.
