Description

A rich, tangy, and herby homemade creamy Italian dressing, perfect for salads, pasta salads, and as a flavorful dip!


Ingredients

Scale
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp honey (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 23 tbsp water (to thin, as needed)

Instructions

Blend the Ingredients:

  • In a food processor or blender, combine mayonnaise, olive oil, Parmesan cheese, red wine vinegar, lemon juice, garlic, and Dijon mustard.
  • Blend until smooth and creamy.

2. Season & Adjust:

  • Add honey (if using), oregano, basil, thyme, onion powder, salt, and pepper.
  • Blend again until well combined.

3. Adjust Consistency:

  • If the dressing is too thick, add 1 tbsp of water at a time until desired consistency is reached.

4. Chill & Serve:

  • Transfer to a jar and refrigerate for at least 30 minutes to let the flavors meld.
  • Serve over fresh salads, pasta salads, or as a dip for veggies.

Notes

  • Storage: Keep refrigerated in a sealed jar for up to 1 week.
  • Vinegar Swap: Apple cider vinegar or white wine vinegar can replace red wine vinegar for a different flavor.
  • Extra Creaminess: Add 1 tbsp Greek yogurt for a richer texture.
