Description

  • 14 oz (400g) mushrooms, sliced
  • 12 onions, sliced (depending on size and preference)
  • 1 whole garlic bulb (top cut off to expose cloves)
  • 7 oz (200g) baby spinach

Herbs & Seasonings:

  • 2 tbsp fresh thyme
  • Salt, to taste
  • Black pepper, to taste

Dairy:

  • 7 oz (200g) cream cheese

Pantry:

  • 14 oz (400g) pasta (your choice)
  • Olive oil, as needed

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 180°C (356°F).
  2. Prepare the Mushrooms and Onions:
    • Spread the sliced mushrooms and onions on a baking sheet.
    • Sprinkle with thyme, salt, and pepper.
    • Drizzle with olive oil and toss to coat evenly.
  3. Add Cream Cheese and Garlic:
    • Dot the cream cheese around the mushrooms and onions.
    • Place the whole garlic bulb, cut side up, on the baking sheet and drizzle it with a little olive oil.
  4. Bake:
    • Cover the baking sheet with aluminum foil.
    • Bake for 30-40 minutes, or until the garlic is soft and the mushrooms and onions are tender.
  5. Cook the Pasta:
    • While the mushrooms, onions, and garlic are baking, cook the pasta according to the package instructions. Drain and set aside, ensuring it’s ready when the vegetables are done roasting.
  6. Combine Ingredients:
    • Squeeze the roasted garlic cloves into a small bowl and mash them into a paste.
    • Add the roasted garlic, baby spinach, and cooked pasta to the baking sheet with the mushrooms and onions.
    • Toss everything together until the spinach wilts and the ingredients are well combined.
  7. Serve:
