For the Casserole:
- 2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper (divided)
- 16 oz frozen broccoli florets (thawed and drained)
- 2 (10.5 oz) cans cream of chicken soup
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp onion powder
For the Topping:
- 1 cup plain breadcrumbs
- 2 tbsp unsalted butter (melted)
Instructions
- Preheat & Prep:
- Preheat the oven to 350°F (175°C).
- Grease a 9×13-inch baking dish and set aside.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken cubes and season with salt and ¼ tsp black pepper.
- Cook for 8-10 minutes, stirring occasionally, until golden brown and cooked through. Set aside.
- Prepare the Broccoli:
- Thaw the frozen broccoli according to package instructions.
- Drain well and pat dry with paper towels to remove excess moisture.
- Mix the Sauce:
- In a large bowl, mix together cream of chicken soup, mayonnaise, sour cream, cheddar cheese, milk, lemon juice, garlic powder, onion powder, and the remaining ¼ tsp black pepper.
- Assemble the Casserole:
- Fold the cooked chicken and thawed broccoli into the sauce mixture.
- Spread the mixture evenly in the prepared baking dish.
- Prepare the Topping:
- In a small bowl, mix breadcrumbs with melted butter.
- Sprinkle evenly over the casserole.
- Bake & Serve:
- Bake for 30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
- Let stand for 5 minutes before serving.
