Description

This Chicken Divan is a rich, creamy, and comforting chicken and broccoli casserole baked to perfection with a cheesy, crunchy breadcrumb topping. Made with tender chicken, cream of chicken soup, and a blend of sour cream, mayo, and cheddar cheese, this easy family dinner is a classic favorite.

For the Casserole:
  • 2 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper (divided)
  • 16 oz frozen broccoli florets (thawed and drained)
  • 2 (10.5 oz) cans cream of chicken soup
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
For the Topping:
  • 1 cup plain breadcrumbs
  • 2 tbsp unsalted butter (melted)

Instructions

  • Preheat & Prep:
    • Preheat the oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish and set aside.
  • Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add chicken cubes and season with salt and ¼ tsp black pepper.
    • Cook for 8-10 minutes, stirring occasionally, until golden brown and cooked through. Set aside.
  • Prepare the Broccoli:
    • Thaw the frozen broccoli according to package instructions.
    • Drain well and pat dry with paper towels to remove excess moisture.
  • Mix the Sauce:
    • In a large bowl, mix together cream of chicken soup, mayonnaise, sour cream, cheddar cheese, milk, lemon juice, garlic powder, onion powder, and the remaining ¼ tsp black pepper.
  • Assemble the Casserole:
    • Fold the cooked chicken and thawed broccoli into the sauce mixture.
    • Spread the mixture evenly in the prepared baking dish.
  • Prepare the Topping:
    • In a small bowl, mix breadcrumbs with melted butter.
    • Sprinkle evenly over the casserole.
  • Bake & Serve:
    • Bake for 30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
    • Let stand for 5 minutes before serving.
