For the Casserole:

  • 4 cups rotisserie chicken, shredded
  • 2 (10 oz) packages frozen chopped spinach, thawed & squeezed dry
  • 1 1/2 cups yellow onion, diced
  • 6 cloves garlic, minced
  • 3 cups cooked long-grain white rice
  • 3 tablespoons all-purpose flour
  • 2 teaspoons dried Italian seasoning
  • 1 3/4 teaspoons kosher salt
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

For the Creamy Sauce:

  • 3 tablespoons unsalted butter
  • 2 1/2 cups whole milk
  • 4 oz chive and onion cream cheese
  • 1/4 cup grated Parmesan cheese

For Topping:

  • 8 oz part-skim mozzarella cheese, shredded
  • Cooking spray

Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish with cooking spray.

Step 2: Cook the Aromatics

  1. In a large skillet, melt butter over medium heat.
  2. Add onions and sauté for 3-4 minutes until soft.
  3. Stir in garlic and cook for 30 seconds until fragrant.

Step 3: Make the Creamy Sauce

  1. Sprinkle in flour and cook for 1 minute, stirring constantly.
  2. Slowly whisk in milk, cooking until thickened (about 5 minutes).
  3. Add cream cheese, Parmesan, Italian seasoning, salt, red pepper flakes, lemon juice, and zest. Stir until smooth.

Step 4: Assemble the Casserole

  1. In a large mixing bowl, combine shredded chicken, spinach, and cooked rice.
  2. Pour in the creamy sauce and mix until well coated.
  3. Transfer mixture to the prepared casserole dish.
  4. Sprinkle with mozzarella cheese.

Step 5: Bake & Serve

  1. Bake uncovered for 25-30 minutes, until cheese is melted and bubbly.
  2. Let cool for 5 minutes, then serve warm!
