- 2 (10 oz) packages frozen chopped spinach, thawed & squeezed dry
- 1 1/2 cups yellow onion, diced
- 6 cloves garlic, minced
- 3 cups cooked long-grain white rice
- 3 tablespoons all-purpose flour
- 2 teaspoons dried Italian seasoning
- 1 3/4 teaspoons kosher salt
- 1/4 teaspoon red pepper flakes
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
For the Creamy Sauce:
- 3 tablespoons unsalted butter
- 2 1/2 cups whole milk
- 4 oz chive and onion cream cheese
- 1/4 cup grated Parmesan cheese
For Topping:
- 8 oz part-skim mozzarella cheese, shredded
- Cooking spray
Instructions
Step 1: Preheat & Prep
- Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish with cooking spray.
Step 2: Cook the Aromatics
- In a large skillet, melt butter over medium heat.
- Add onions and sauté for 3-4 minutes until soft.
- Stir in garlic and cook for 30 seconds until fragrant.
Step 3: Make the Creamy Sauce
- Sprinkle in flour and cook for 1 minute, stirring constantly.
- Slowly whisk in milk, cooking until thickened (about 5 minutes).
- Add cream cheese, Parmesan, Italian seasoning, salt, red pepper flakes, lemon juice, and zest. Stir until smooth.
Step 4: Assemble the Casserole
- In a large mixing bowl, combine shredded chicken, spinach, and cooked rice.
- Pour in the creamy sauce and mix until well coated.
