Description

These Cream Cheese Chicken Taquitos are crispy, cheesy, and packed with flavor! Made with shredded chicken, cream cheese, and warm spices, they’re the perfect easy appetizer, snack, or dinner. Serve them with salsa, guacamole, or sour cream for an irresistible bite!

For the Filling:

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp cumin
  • Salt and pepper, to taste

For the Taquitos:

  • 8 small corn or flour tortillas
  • Cooking oil (for frying)

Optional Garnishes:

  • Sour cream
  • Salsa
  • Guacamole

Instructions

1. Prepare the Filling:

  1. In a mixing bowl, combine shredded chicken, cream cheese, shredded cheese, cilantro, garlic powder, onion powder, cumin, salt, and pepper. Mix well.

2. Warm the Tortillas:

  1. Heat a small amount of oil in a skillet over medium heat.
  2. Warm each tortilla for 30 seconds per side until pliable to prevent tearing.

3. Roll the Taquitos:

  1. Place 2 tablespoons of filling in the center of each tortilla.
  2. Roll tightly, tucking in the ends as you go.

4. Fry the Taquitos:

  1. Heat ½ inch of oil in a deep skillet over medium heat.
  2. Once the oil is hot (test with a small piece of tortilla—it should sizzle), add the taquitos in batches.
  3. Fry for 2-3 minutes per side until golden brown and crispy.
  4. Remove from the oil and drain on a paper towel-lined plate.

5. Serve and Enjoy!

  1. Serve warm with sour cream, salsa, or guacamole.

Notes

  • Baking Option: Brush with oil and bake at 400°F (200°C) for 15-20 minutes, flipping halfway.
  • Air Fryer Option: Spray with oil and air fry at 375°F (190°C) for 10-12 minutes, flipping halfway.
