Description

These classic cordial cherries are a luxurious homemade treat featuring maraschino cherries wrapped in a smooth fondant center and dipped in rich chocolate. Ideal for gifting or savoring during the holidays, they melt in your mouth with a luscious cherry surprise.


Ingredients

  • 24 maraschino cherries with stems, drained and patted dry

  • 2 tablespoons butter, softened

  • 2 tablespoons corn syrup

  • 2 cups powdered sugar

  • 1/2 teaspoon vanilla extract

  • 10 oz semi-sweet or dark chocolate, chopped

 

  • 1 tablespoon shortening or coconut oil (optional, for smoother chocolate)


Instructions

  • In a mixing bowl, combine softened butter, corn syrup, vanilla, and powdered sugar to make a soft fondant dough.

  • Flatten a small piece of fondant in your hands and wrap it around each cherry until fully encased.

  • Place the fondant-covered cherries on a parchment-lined tray and freeze for 30 minutes.

  • Melt the chocolate and shortening (if using) in a heatproof bowl over a double boiler or microwave in 30-second intervals, stirring until smooth.

  • Dip each cherry into the melted chocolate, allowing excess to drip off. Place on parchment paper.

  • Let the chocolate set at room temperature or refrigerate for 15–20 minutes.

 

  • Store in an airtight container in a cool place for 1–2 weeks to allow the fondant to liquefy into a cordial center.


Notes

  • Allowing the cordial cherries to sit for a few days enhances the signature liquid center.

  • Using dark chocolate provides a rich contrast to the sweet fondant and cherry.

  • Make sure cherries are well-dried before wrapping to prevent the fondant from slipping.
