These classic cordial cherries are a luxurious homemade treat featuring maraschino cherries wrapped in a smooth fondant center and dipped in rich chocolate. Ideal for gifting or savoring during the holidays, they melt in your mouth with a luscious cherry surprise.
Ingredients

24 maraschino cherries with stems, drained and patted dry

2 tablespoons butter, softened

2 tablespoons corn syrup

2 cups powdered sugar

1/2 teaspoon vanilla extract

10 oz semi-sweet or dark chocolate, chopped

1 tablespoon shortening or coconut oil (optional, for smoother chocolate)
Instructions

In a mixing bowl, combine softened butter, corn syrup, vanilla, and powdered sugar to make a soft fondant dough.

Flatten a small piece of fondant in your hands and wrap it around each cherry until fully encased.

Place the fondant-covered cherries on a parchment-lined tray and freeze for 30 minutes.

Melt the chocolate and shortening (if using) in a heatproof bowl over a double boiler or microwave in 30-second intervals, stirring until smooth.

Dip each cherry into the melted chocolate, allowing excess to drip off. Place on parchment paper.

Let the chocolate set at room temperature or refrigerate for 15–20 minutes.

Store in an airtight container in a cool place for 1–2 weeks to allow the fondant to liquefy into a cordial center.
