Description
This Coffee Mug Cake is a quick, single-serving dessert that comes together in just 5 minutes! Soft, fluffy, and topped with a cinnamon streusel, it’s the perfect treat for when you’re craving something sweet but don’t want to bake an entire cake.

For the Cake:
- 3 tbsp spelt, white, oat, or almond flour
- 1/4 tsp baking powder
- 1/16 tsp salt
- Pinch uncut stevia or 1 tbsp sugar
- 1 tbsp + 2 tsp water (or 1 egg/flax egg if using almond flour)
- 2 tsp oil, buttery spread, or applesauce
- 1/4 tsp pure vanilla extract
For the Streusel Topping: (Feel free to double for extra streusel!)
- 1/8 tsp cinnamon
- 1 1/4 tsp sucanat, brown sugar, or keto sweetener
- 1/4 to 1/2 tsp oil, butter, or applesauce (for low-fat option)
- Tiny pinch salt
- 2 pecan or walnut halves, chopped
Instructions
1. Make the Cake Batter
- In a microwave-safe mug, mix together flour, baking powder, salt, and sweetener.
- Stir in water (or egg), oil (or applesauce), and vanilla extract until smooth.
2. Prepare the Streusel
- In a separate bowl, mix cinnamon, sugar, salt, and oil/butter until crumbly.
- Stir in chopped pecans or walnuts.
3. Assemble & Cook
- Sprinkle the streusel topping over the cake batter in the mug.
- Microwave on high for 1 minute (or slightly longer, depending on wattage).
- Let cool slightly before enjoying.
Notes
- Oven Option: Bake in an oven-safe ramekin at 350°F (175°C) for 10-12 minutes.
- Make it Vegan: Use applesauce or flax egg instead of a regular egg.
- For a Moister Cake: Add ½ tbsp Greek yogurt or mashed banana to the batter.
