Ingredients

Units Scale

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup pecans, chopped

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 8 oz whipped topping (thawed)

For the Pudding Layer:

  • 2 small boxes (or 1 large box) instant vanilla pudding mix
  • 3 cups milk

For the Topping:

  • 1 can cherry pie filling

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, melted butter, and chopped pecans. Stir until well mixed.
  3. Press the mixture evenly into a 9×13-inch baking dish.
  4. Bake for 15-20 minutes, or until the crust is golden brown. Let it cool completely.

Step 2: Make the Cream Cheese Layer

  1. In a mixing bowl, beat cream cheese and powdered sugar until smooth and creamy.
  2. Gently fold in whipped topping until fully incorporated.
  3. Spread the cream cheese mixture over the cooled crust, ensuring an even layer.

Step 3: Prepare the Pudding Layer

  1. In a separate bowl, whisk together pudding mix and milk for 2 minutes until it thickens.
  2. Spread the pudding over the cream cheese layer, smoothing it out evenly.

Step 4: Add the Cherry Topping

  1. Pour cherry pie filling over the pudding layer, spreading it out evenly.

Step 5: Chill & Serve

  1. Cover with plastic wrap and refrigerate for at least 4 hours (overnight is best).
  2. Cut into squares or scoop into bowls and enjoy!

Notes

  • For a shortcut, use a graham cracker crust instead of the baked pecan crust.
  • Want a different flavor? Swap cherry pie filling for blueberry, strawberry, or apple.
  • Let it chill overnight for the best flavor and texture.
  • Garnish with whipped cream or extra chopped pecans for a decorative touch!
