Description

 

Cherries Jubilee is a vintage, show-stopping dessert made with sweet cherries flambéed in kirsch or rum and served over vanilla ice cream. Elegant and theatrical, it’s the perfect end to a romantic dinner or classy gathering.


Ingredients

  • 2 cups fresh or frozen dark sweet cherries, pitted

  • 1/3 cup granulated sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch (optional, for thicker sauce)

  • 1/3 cup kirsch (cherry brandy) or dark rum

  • 1/2 teaspoon vanilla extract

 

  • Vanilla ice cream, for serving


Instructions

 

  1. In a skillet over medium heat, combine cherries, sugar, and lemon juice. Stir and simmer for 5–7 minutes until cherries soften and release juices.

  2. (Optional) Mix cornstarch with a tablespoon of water and stir into the skillet if a thicker sauce is desired. Simmer until thickened.

  3. Remove skillet from heat, stir in vanilla extract, then pour in the kirsch or rum.

  4. Carefully ignite the liquor with a long lighter or match (stand back) and let the flames burn off naturally.

  5. Spoon the warm cherries and sauce over vanilla ice cream and serve immediately.


Notes

 

  • Always use caution when flambéing—turn off fans, keep flammables away, and never pour alcohol directly from the bottle.

  • Kirsch gives the most authentic flavor, but dark rum or brandy are great alternatives.

  • Frozen cherries work well, just thaw and drain before cooking.
