Description
Cherries Jubilee is a vintage, show-stopping dessert made with sweet cherries flambéed in kirsch or rum and served over vanilla ice cream. Elegant and theatrical, it’s the perfect end to a romantic dinner or classy gathering.
Ingredients

2 cups fresh or frozen dark sweet cherries, pitted

1/3 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch (optional, for thicker sauce)

1/3 cup kirsch (cherry brandy) or dark rum

1/2 teaspoon vanilla extract

Vanilla ice cream, for serving
Instructions

In a skillet over medium heat, combine cherries, sugar, and lemon juice. Stir and simmer for 5–7 minutes until cherries soften and release juices.

(Optional) Mix cornstarch with a tablespoon of water and stir into the skillet if a thicker sauce is desired. Simmer until thickened.

Remove skillet from heat, stir in vanilla extract, then pour in the kirsch or rum.

Carefully ignite the liquor with a long lighter or match (stand back) and let the flames burn off naturally.

Spoon the warm cherries and sauce over vanilla ice cream and serve immediately.
Notes

Always use caution when flambéing—turn off fans, keep flammables away, and never pour alcohol directly from the bottle.

Kirsch gives the most authentic flavor, but dark rum or brandy are great alternatives.

Frozen cherries work well, just thaw and drain before cooking.
