Ingredients

1 cup dried cherries (unsweetened preferred)

1 cup raw almonds or cashews

1/4 cup unsweetened cocoa powder

2 tablespoons chia seeds

1 tablespoon flaxseed meal (optional)

1/2 teaspoon vanilla extract

1 tablespoon maple syrup or honey (optional, for added sweetness)

1-2 tablespoons water, as needed
Instructions

In a food processor, pulse the dried cherries and nuts until finely chopped and starting to stick together.

Add cocoa powder, chia seeds, flaxseed meal (if using), and vanilla extract. Blend until the mixture is uniform.

If the mixture is too crumbly, add maple syrup or honey and a splash of water, a little at a time, until it holds together when pressed.

Roll into 1-inch balls using your hands and place on a parchment-lined tray.

Chill in the refrigerator for at least 20 minutes to firm up.
