For the Chicken Filling:
- 1 lb ground chicken (or turkey, beef, or pork)
- 1 tbsp vegetable or peanut oil
- 1/2 cup yellow onion, minced
- 2 large garlic cloves, minced
- 1 pinch crushed red chili pepper flakes
- 8–10 cremini mushrooms, diced
- 8 oz whole water chestnuts, drained and diced
- 1 tsp fresh ginger, grated
- 1 head butter lettuce (or baby romaine lettuce)
For the Sauce:
- 5 tbsp low-sodium soy sauce (or coconut aminos for gluten-free)
- 1 tbsp toasted sesame oil
- 2 tbsp rice wine vinegar
- 2 tbsp hoisin sauce
- 1 1/2 tsp lime juice
- Salt & pepper, to taste
Optional Garnishes:
- Green onions, sliced
- Sesame seeds
- Chopped peanuts
Instructions
- Prepare the Sauce: In a small bowl, whisk together soy sauce, sesame oil, rice wine vinegar, hoisin sauce, lime juice, salt, and pepper. Set aside.
- Sauté the Mushrooms: Heat 1 tbsp of oil in a large non-stick skillet over medium-high heat. Add diced mushrooms and sauté for 2-3 minutes until softened. Remove and set aside.
- Cook the Chicken: In the same skillet, add a little more oil and cook the ground chicken until browned. Halfway through cooking, add minced onion, red chili flakes, garlic, and ginger. Stir well.
- Combine Everything: Return the mushrooms to the skillet, then stir in the chopped water chestnuts and prepared sauce. Simmer for 1-2 minutes to blend flavors.
- Assemble Wraps: Spoon about 2 heaping tablespoons of the chicken mixture into each lettuce leaf. Squeeze fresh lime juice over the top.
- Garnish & Serve: Sprinkle with sesame seeds, chopped peanuts, and green onions. Serve immediately.

- For extra flavor, add a dash of sriracha or chili garlic sauce to the sauce.
- Make it meal-prep friendly by storing the filling separately from the lettuce leaves.
- For a crunchier texture, use iceberg lettuce instead of butter lettuce.
