Description

Indulge in the rich and creamy flavors of this Garlic Chicken and Broccoli Pasta—a perfect comfort dish! Tender chicken, fresh broccoli, and penne pasta are coated in a luscious garlic cream sauce, making it an easy and satisfying meal for busy weeknights.


Ingredients

Units Scale

Meat:

2 chicken breasts, cooked and cut into small cubes

Produce:

2 cups broccoli florets

4 cloves garlic, minced

1 small onion, finely chopped

Pasta & Grains:

8 oz penne pasta

Baking & Spices:

2 tbsp all-purpose flour

1 tsp salt

1 tsp pepper

Oils & Vinegars:

2 tbsp olive oil

Dairy:

1 cup Parmesan cheese, grated

2 cups whole milk


Instructions

Cook the Pasta & Broccoli:

 

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions.

In the last 2 minutes of cooking, add the broccoli florets. Drain and set aside.

Prepare the Chicken:

 

In a large skillet, heat olive oil over medium heat.

Add the cooked, cubed chicken and sauté for 2 minutes. Remove and set aside.

Make the Garlic Cream Sauce:

 

In the same skillet, add a bit more olive oil if needed. Sauté the onion until translucent, about 2 minutes.

Add the minced garlic and cook for another 30 seconds.

Stir in the flour and cook for 1 minute to eliminate the raw flour taste.

Add the Milk & Cheese:

 

Gradually whisk in the whole milk, stirring continuously until smooth and thickened.

Stir in the Parmesan cheese until fully melted. Season with salt and pepper.

Combine Everything:

 

Add the cooked chicken, pasta, and broccoli into the skillet. Toss well to coat everything in the creamy sauce.

Serve & Enjoy:

 

Garnish with extra Parmesan and black pepper if desired. Serve hot!


Notes

For extra creaminess, substitute half of the milk with heavy cream.

Add red pepper flakes for a little heat.

You can use rotisserie chicken for convenience.
