Start your day with this Cheesy Potato Egg Scramble—a hearty, comforting breakfast packed with crispy potatoes, fluffy eggs, and melty cheddar cheese. Perfect for busy mornings, brunch, or even a quick dinner, this dish is easy to customize with veggies, meats, or different cheeses!


Ingredients

  • 4 medium potatoes, diced
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup cooked ham or bacon, chopped (optional)
  • 1/4 cup green onions or chives, chopped
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  • Boil the potatoes – In a pot of salted water, boil the diced potatoes for 10-15 minutes until fork-tender. Drain and set aside.
  • Sauté the potatoes – In a large skillet, melt the butter over medium heat. Add the boiled potatoes and cook for 5-7 minutes until golden and crispy.
  • Add meat (if using) – Stir in the chopped ham or bacon and cook for an additional 2-3 minutes.
  • Whisk the eggs – In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  • Cook the eggs – Pour the egg mixture over the potatoes. Gently stir, allowing the eggs to cook and scramble. Cook for about 5 minutes, stirring occasionally.
  • Add the cheese – Sprinkle shredded cheddar cheese over the top. Cover the skillet and let cook for 2-3 minutes until the cheese melts.
  • Garnish & serve – Remove from heat, sprinkle with chopped green onions or chives, and enjoy warm!
