- 2 cups shredded cooked chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 4 oz cream cheese
- 2 cups chicken broth
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp paprika
- 2 eggs, beaten
- 1 1/2 cups breadcrumbs
- Vegetable oil for frying
Instructions
- Prepare the Filling: Heat olive oil in a pan and sauté onion and garlic until soft. Add shredded chicken, mix well, and stir in cream cheese. Season with salt and paprika. Set aside.
- Make the Dough: In a saucepan, bring chicken broth to a boil. Add flour all at once and stir vigorously until a dough forms.
- Transfer the dough to a floured surface and knead until smooth.
- Take small pieces of dough, flatten them, and place a spoonful of chicken filling inside. Shape into a teardrop (coxinha shape).
- Dip each coxinha into beaten eggs, then coat with breadcrumbs.
- Heat vegetable oil in a deep pan and fry until golden brown.
- Drain on paper towels and serve warm with your favorite dipping sauce.
Notes
- For extra crispiness, double coat the coxinhas by dipping them in egg and breadcrumbs twice.
- Serve with Brazilian hot sauce or garlic aioli for added flavor.
