Description

This Banana Split Icebox Cake is a no-bake dessert layered with graham crackers, banana slices, creamy pudding, whipped topping, cherries, and a drizzle of chocolate. It’s the perfect summer treat that captures all the flavors of a classic banana split—no oven required!


Ingredients

  • 1 box graham crackers

  • 2-3 ripe bananas, sliced

  • 1 (3.4 oz) box instant vanilla pudding mix

  • 1 1/2 cups cold milk

  • 1 (8 oz) container whipped topping (like Cool Whip), divided

  • 1/4 cup chocolate syrup or hot fudge sauce

  • 1/4 cup shredded sweetened coconut (optional)

  • Maraschino cherries for garnish

  • Optional: chopped nuts, pineapple tidbits, or strawberries


Instructions

  • In a medium bowl, whisk together the vanilla pudding mix and cold milk until thickened (about 2–3 minutes). Fold in half of the whipped topping.

  • On a serving dish or in a square baking dish, lay down a single layer of graham crackers.

  • Spread a third of the pudding mixture over the crackers.

  • Add a layer of banana slices on top.

  • Repeat the layers (crackers, pudding, bananas) two more times, ending with pudding on top.

  • Spread the remaining whipped topping over the final pudding layer.

  • Drizzle with chocolate syrup, sprinkle with shredded coconut, and top with maraschino cherries.

  • Cover and refrigerate for at least 4 hours or overnight, until the graham crackers soften into a cake-like texture.

 

  • Slice and serve chilled.

  • Add chopped nuts or pineapple for more banana split flavor.

  • Use banana or chocolate pudding for a flavor twist.

  • Best made a day ahead for easier slicing and best texture.
