Ingredients

  • 4 medium zucchinis, cut into sticks

  • 1/2 cup grated Parmesan cheese

  • 1/3 cup seasoned breadcrumbs

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or grease lightly.

  • Toss zucchini sticks in a large bowl with olive oil until coated evenly.

  • In a separate bowl, mix Parmesan, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.

  • Dredge each zucchini stick in the Parmesan mixture, pressing gently to adhere.

  • Place zucchini in a single layer on the prepared baking sheet, spacing them slightly apart.

  • Bake for 20–25 minutes, flipping halfway through, until golden and crisp.
