Description

Spicy, savory Sichuan noodles with crispy minced pork and a bold, flavorful sauce, bringing the heat and umami of classic street-style Dan Dan noodles.

For the Noodles & Pork:
  • 8 oz fresh wheat noodles or ramen noodles
  • 1/2 lb ground pork
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon Sichuan peppercorns, crushed
  • 1 tablespoon soy sauce
  • 1 teaspoon Shaoxing wine (optional)
  • 1 teaspoon sugar
For the Sauce:
  • 2 tablespoons sesame paste (or peanut butter)
  • 1 tablespoon soy sauce
  • 1 tablespoon black vinegar
  • 1 teaspoon chili oil (adjust to taste)
  • 1/2 teaspoon Sichuan pepper powder
  • 1/2 teaspoon sugar
  • 2 tablespoons hot water
For Garnish:
  • 2 green onions, sliced
  • 1/4 cup roasted peanuts, crushed
  • 1/2 cup blanched bok choy
  • Extra chili oil (optional)


Instructions

  1. Cook noodles according to package instructions, drain, and set aside.
  2. In a bowl, whisk together all sauce ingredients until smooth.
  3. Heat vegetable oil in a pan over medium heat. Add garlic, ginger, and Sichuan peppercorns, stirring until fragrant.
  4. Add ground pork and cook until crispy and browned. Stir in soy sauce, Shaoxing wine, and sugar, cooking for another minute.
  5. Divide the sauce into serving bowls. Add cooked noodles and toss to coat evenly.
  6. Top with crispy pork, green onions, peanuts, and bok choy. Drizzle extra chili oil if desired.
  7. Serve immediately and enjoy!

  • Adjust the chili oil and Sichuan pepper for desired spice levels.
  • Use handmade wheat noodles for the most authentic texture.
