Scale
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Prepare the batter: In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; lumps are okay.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with butter, maple syrup, or your favorite toppings.
Notes
- For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
- Swap milk for buttermilk for a tangy twist.
- Add blueberries, chocolate chips, or banana slices to the batter for variety.
