For the Meatballs:
- 1/2 lb ground pork
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp Italian seasoning
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- Salt and pepper, to taste
For the Alfredo Sauce:
- 1 cup heavy cream
- 1 1/4 cups Parmesan cheese, grated
- 2 cloves garlic, minced
Instructions
1. Prepare the Meatballs:
- In a large bowl, mix ground pork, breadcrumbs, egg, Italian seasoning, parsley, garlic, salt, and pepper until well combined.
- Shape into small meatballs (about 1-inch in diameter).
- Heat a large skillet over medium heat and drizzle with a little oil. Sear the meatballs for 4-5 minutes, turning until browned on all sides.
- Remove the meatballs from the skillet and set aside.
2. Make the Alfredo Sauce:
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant.
- Pour in the heavy cream, stirring constantly.
- Add grated Parmesan cheese and cook over low heat, stirring until smooth and thick.
3. Combine & Serve:
- Return the meatballs to the skillet, coating them in the Alfredo sauce. Simmer for 5-7 minutes until the meatballs are fully cooked.
- Garnish with extra Parmesan and fresh parsley.
- Serve over pasta, mashed potatoes, or rice, and enjoy!
