- 1 egg (beaten)
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Caramelized Onion Sauce:
- 1 large onion (thinly sliced)
- 2 tbsp butter
- 1 tsp balsamic vinegar
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 tsp garlic powder
- Salt & pepper to taste
Instructions
- Prepare the Chicken: Slice a pocket into each chicken breast and stuff with goat cheese and fresh herbs. Secure with toothpicks to keep the filling inside.
- Bread the Chicken: Dredge each stuffed chicken breast in flour, dip in beaten egg, and coat with a mixture of panko and Parmesan cheese.
- Cook the Chicken: Heat olive oil in a pan over medium heat and cook the chicken for 5-6 minutes per side until golden brown and fully cooked. Remove from the pan and let rest.
- Make the Sauce: In the same pan, melt butter and sauté onions over low heat until caramelized (about 15 minutes). Add balsamic vinegar, chicken broth, and garlic powder, simmering for 5 minutes. Stir in heavy cream, season with salt and pepper, and cook until thickened.
