Description

Make bakery-style donuts at home with this Fluffy Baked Jelly-Filled Donuts recipe! These golden, soft, and pillowy donuts are filled with sweet jelly or jam and dusted with powdered sugar. Perfect for breakfast, dessert, or a special treat for any occasion!

Ingredients

Scale

Dry Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/4 teaspoon salt

Wet Ingredients:

  • 2 egg yolks
  • 4 tablespoons unsalted butter, melted
  • 2/3 cup milk, warmed (about 110°F/43°C)
  • 1/2 teaspoon vanilla extract

Filling and Topping:

  • 1/3 cup smooth jelly or jam (any flavor)
  • Powdered sugar for dusting

Instructions

  • Activate the Yeast:
    • In a large mixing bowl, combine the warm milk, 2 tablespoons of sugar (from the measured 1/2 cup), and yeast. Let it sit for 5 minutes until foamy.
  • Mix the Dough:
    • Add the egg yolks, melted butter, vanilla extract, remaining sugar, and salt to the yeast mixture. Stir until combined. Gradually mix in the flour, 1/2 cup at a time, until a soft dough forms.
  • Knead the Dough:
    • Transfer the dough to a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.
  • First Rise:
    • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  • Shape the Donuts:
    • Punch down the dough and roll it out to about 1/2-inch thickness. Use a round cookie cutter (about 3 inches in diameter) to cut out circles. Re-roll scraps as needed.
  • Second Rise:
    • Place the dough circles on a parchment-lined baking sheet, cover with a towel, and let rise for 30 minutes.
  • Bake the Donuts:
    • Preheat the oven to 350°F (175°C). Bake the donuts for 10-12 minutes, or until lightly golden on top.
  • Fill the Donuts:
    • Allow the donuts to cool slightly. Use a piping bag with a round tip to inject jelly or jam into the center of each donut.
  • Dust with Powdered Sugar:
    • Sprinkle powdered sugar over the donuts before serving.

Notes

  • Filling Tip: For easier filling, insert the piping tip into the side of the donut.
  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days.
  • Reheating: To enjoy warm donuts, microwave for 10-15 seconds.
